Flour

Flours and starches for baking and cooking: hard yellow flour, soft white flour, corn flour, rice flour, raw carob flour and potato starch.
Soft white flour is for cakes, cookies and puff pastry, hard yellow for bread, pizza and pasta. Rice and corn flour do not contain gluten and give a crispy result to fried foods and cookies.
Carob flour has its own sweetness: replace up to one-fifth of the flour in a recipe and reduce the sugar a bit.
