Tomato sauces are made from ripe, seasonal fruit and provide a ready-made base for pasta, stuffed and stewed dishes. Mustards cover the entire range, from mild ones for sandwiches to Dijon for dressings and marinades.
A spoonful of mustard stabilizes each vinaigrette and keeps it from separating. After opening, everything is kept in the refrigerator.
