Herbal Extracts

Herbal extracts in edible form, such as balsamic oil, made by infusing herbs in vegetable oil.
Balsamic oil is traditionally made with St. John's wort flowers that are left in the sun in oil until they turn a deep red color. It is used in small quantities, raw, without cooking.
Store it in a dark bottle, away from the sun, and use it within a few months of opening.
