Salt

Messolonghi salt and Himalayan salt, in fine and coarse crystalline form.
Messolonghi salt is collected from Greek salt pans and is the classic kitchen salt, while pink Himalayan salt has a milder flavor and is often used at the table and in a grinder.
Coarse salt is for pasta water, for baking in parchment paper, and for pickling; fine salt is for the finish of the dish, where it dissolves immediately.
