16 productsLegumes
Greek legumes by place of origin: Serres chickpeas, Evros and Englouvis lentils, Prespa giant and flat beans, Serres fava beans, Voio black-eyed peas and Larissa black beans. The category also covers the less common ones — rovitsa, Tripoli beans, peas, red lentils, mullet and red beans — along with bulgur for salads and stuffed dishes. Soak the large beans the night before and salt at the end of boiling, so that the skin does not harden. Red lentils do not need soaking and boil in a few minutes.Δείτε τα όσπρια
52 productsSpices
Spices for every cuisine, from pepper and paprika to sumac, turmeric and mahlep, in whole and ground form. In the collection you will find the basics of Greek cuisine — allspice, Ceylon and Indonesian cinnamon, coriander, cumin, rosemary, sweet and hot cloves — along with spices from Middle Eastern and Asian cooking, such as sumac, cardamom, curry and cayenne pepper. There are also ready-made mixes, such as begonia and lemon pepper, for quick seasoning. Whole spices retain their aroma much longer than ground ones: if you cook often, prefer whole seeds and grind them shortly before use. Keep them in a closed container, away from light and moisture.Δείτε τα μπαχαρικά
39 productsHerbs
Greek and imported herbs, from mountain tea and dittany to valerian, echinacea and licorice, in leaves, flowers and roots. The variety covers both kitchen herbs — bay leaf, rosemary, basil, sage — and those that are drunk as a decoction, such as chamomile, lemon balm, rockrose and birch. For a good decoction, leave the herbs in hot water for three to five minutes and cover the cup so that the essential oils are not lost. Keep them in a dark place; light fades both the color and the aroma.Δείτε τα βότανα
10 productsHoney and Bee Products
Greek honey from small beekeepers: thyme, pine, fir, chestnut, oak, heather, mugwort, wicker and flower. Each variety has its own character: thyme is intensely aromatic and sweet, pine is milder and less sweet, chestnut and mugwort leave a slightly bitter aftertaste. Fir honey with vanilla crystallizes with difficulty and remains creamy. Crystallization is natural and does not alter the honey; if you want to liquefy it, put the jar in lukewarm water and not in boiling water.Δείτε το μέλι και τα προϊόντα μέλισσας
22 productsPasta
Traditional Greek pasta: noodles, sour and sweet trahanas, orzo, pappardelle, tagliatelle, vermicelli and couscous. Most are handmade, by small producers, with dough that dries slowly — that's why they hold their shape better when boiling and bind with the sauce. There are also whole-wheat options and pasta with vegetables or with tomato and basil. Trahanas needs slow boiling in broth or milk, noodles a few minutes in plenty of salted water. Keep some of the boiling water to thicken the sauce.Δείτε τα ζυμαρικά
