What is Whole Grain Vegetable Trachanas?

THE frumenty is a traditional Greek pasta, made from flour and vegetables or milk/yogurt, which is naturally dried.

This particular one vegetable stew is made from wholemeal flour and vegetables (potato, carrot, celery, onion), without animal ingredients.

This is one of the most nutritious and traditional dishes of the Greek diet.

What to cook with whole-grain vegetable scraps

🥣 1. Chicken Soup with Vegetables

A traditional and nutritious choice. Sauté onion and garlic in olive oil, add grated tomato, carrot, zucchini and pepper. Add water or vegetable broth and the trachanas. Boil until thickened and serve with fresh chopped parsley.

🥘 2. Stuffed with Trachana

Instead of rice, use trachana as a filling for tomatoes, peppers, or zucchini. Mix the trahana with chopped vegetables, herbs and olive oil. Fill with vegetables and bake until tender.

🧀 3. Pita with Trachana and Vegetables

Combine trachana with spinach, leeks and feta cheese for a delicious pie. Spread the mixture on a sheet of pastry, cover with another sheet and bake until golden brown.

🍲 4. Trachanas with Mushrooms and Spinach

Sauté mushrooms and spinach in olive oil, add trachana and water or broth. Cook until thickened and serve with a little lemon.

Boil the trahana, let it cool and mix with cherry tomatoes, cucumber, olives, feta cheese and herbs. Drizzle with olive oil and lemon for a refreshing salad.

  • In a pot, boil ~1.5 liters of water or vegetable broth.
  • Add 200-250 g of trachana.
  • Simmer for 10-12 minutes, stirring frequently.
  • Add salt, pepper or seasonings of choice.
